Ultimate Reset Day 3

BREAKFAST: Eggs, spinach and whole wheat toast
LUNCH: Lentil-lime salad, and a green salad with garlic dressing
SNACK: Chocolate Shakeology, made with water and avocado
DINNER: Sushi with brown rice, tempeh, cucumbers, avocado and carrots, with a Japanese cucumber salad and miso soup
WATER:  81 ounces, flavored with cucumbers and lime today (just to spice it up)
SUPPLEMENTS: Done, only slightly out of order
EXERCISE: 22 pushups, and a 3 mile walk in the morning

Somehow I am having a hard time keeping track of my supplements. You wouldn’t think it was very hard, but I seem to be always off a little. I made up for it by the end of the day.

I didn’t have time to prep food much last night, so I ended up doing a lot this morning. It worked out well, and I have lunch already prepped for tomorrow too! Cory (husband) ended up helping, which really sped up the process. It was also nice to work in the kitchen with him this morning, and share that time together.

I love eggs, so breakfast was great for me. I know I am going to miss them, as this is my last meal of eggs for the rest of the 21 days. I usually eat them about 3-4 times per week, so I know it is a food I will crave. I really liked the lentil-lime salad for lunch, although this is still WAY too much food for me at one time. I ended up calling up a friend of mine who just complete the whole eating program, and asking how on earth she ate all of this food! She agreed it is a lot of food during this first week, but that it tapers down throughout the program. I ended up saving a lot of lunch for another time, as I just couldn’t eat anymore.

To be honest, I was really scared for this dinner tonight. I usually like sushi, but there was something about this recipe that intimidated me. Maybe it was the tempeh (I don’t normally like it). Maybe it was the brown rice instead of my favorite sushi rice. Or maybe it was that I usually love cream cheese in my sushi (don’t knock it until you’ve tried it). Regardless, it was actually quite delicious. The kids loved it too, however they gobbled up the miso soup so fast, that I had to make more. They even asked for it in their lunch for tomorrow (we’ll have to see about that one).

Overall, I am feeling good. On any given day I could eat like this. However, I usually do not go this many days in a row of eating quite this healthy. Usually I follow the 80/20 guideline, of eating clean 80% of the time, but still reserving 20% to fall outside that category. I can’t wait to see what 21 days of this will bring for me.

I think I only have three more days until I go completely vegan. But, for now, I will enjoy my yogurt for breakfast tomorrow.
