SNACK: None
DINNER: Steamed broccoli and asparagus, with roasted fennel

EXERCISE: 2.25 mile walk (with a great friend)
I felt like I had a little breathing room today, which was nice, so I went with for a walk with a great friend of mine this morning. It was wonderful! I love getting time to talk with her, and share what is happening in each other’s lives. I really needed that! Everyone should have a friend like this in their lives, and should spend more time with them.
At work, I had my final exit interviews with students, and then spent the rest of the afternoon helping Cory with finishing touches on his Masters. I am SO EXCITED to say that he officially submitted it, and is now has his Master’s degree. I am incredibly proud of him. Although his project does not show all of the work that went into his education and degree, it represents years of dedication and perseverance to finally make it happen! I couldn’t be more proud of him. I asked him what he would have as his celebration meal if he could choose, and he wanted Chapala’s Mexican restaurant, so that is on the list for Monday!
Keenan had a baseball game today, so dinner was delayed until around 7:45pm. I am had also delayed lunch today due to my interviews, so I was entering dinner very hungry again (I really need to time things better, and probably include the optional snack). On a side note, lunch was also good, but a little too spicy for me. I need to add less cayenne pepper next time! I also hadn’t finished lunch, and gave the rest to Cory (so we split one lunch). That also added to my hunger today. The kids and I were leery of the roasted fennel for dinner, but as soon as Rhys tried it, he said, “This is delicious! This is my new favorite vegetable, mom.” I agree that it was good, although I would say it is better as a side dish rather than the full meal, as I couldn’t only eat so much of it. The amount of broccoli and asparagus combined was HUGE. I went into the dinner to hungry, but then was full after about halfway through. It was crazy!
During dinner, Keenan decided that we should watch a family movie together. He went through a full voting process, which was unbelievably cute, and we finally settled on Beauty and the Beast. I am pretty sure Elliott was the only one awake by the end of it, and Cory and the boys and I ended up sleeping all night in the living room. It was fun cuddle time, though.
Only two more days of the Ultimate Reset……I am so incredibly proud of myself for what I have been doing…
