This is my favorite breakfast! So easy to make, so delicious, and healthy for you too!

Ingredients:

  • 2 cups of Spinach or Kale (or other leafy greens), steamed
    • I use microwave for 1.5-2 minutes to cook greens and black beans
  • 1/3 cup Black Beans
  • 1 Egg, Over-Easy
  • Salt & Pepper, to taste
  • 2 tbsp of Salsa
  • 1 tbsp of Sour Cream
  • Cilantro (for garnish, or taste)

Nutritional Information:

  • Calories – 185
  • Fat – 7.7 grams
  • Carbs – 16.8 grams
    • Added sugars – None, depending on salsa and sour cream
      • Trader Joe’s sells sugar-free of both of these
  • Protein – 12.9 grams
  • Great source of Vit A and Vit C and good source of Calcium, and Iron

It is also kid-approved! Keenan (6 y/o) has asked that we open up a restaurant in the summer (Mon-Thurs) to sell this dish.
