This is my favorite breakfast! So easy to make, so delicious, and healthy for you too!
Ingredients:
- 2 cups of Spinach or Kale (or other leafy greens), steamed
- I use microwave for 1.5-2 minutes to cook greens and black beans
- 1/3 cup Black Beans
- 1 Egg, Over-Easy
- Salt & Pepper, to taste
- 2 tbsp of Salsa
- 1 tbsp of Sour Cream
- Cilantro (for garnish, or taste)
