BREAKFAST: Oatmeal, plain yogurt and blueberries
LUNCH: Greek salad with salmon
SNACK: Granny Smith apple and almond butter (sorry, I forgot to take a picture, but I think you know what that looks like)
DINNER: Southwestern Tacos

EXERCISE: 22 pushups, and a 2 mile walk in the morning

Day 1 (1)

Well, today didn’t go quite as planned, but it all worked out in the end.

One of the hardest things about this program is the timing of all the food and supplements. It is not conducive for some of my days when I am running from one thing to the next, and teaching a good portion of the day. However, I made it work.

We woke up a little later this morning, and I was glad I had prepared the oatmeal the night before. I made my special oat groat oatmeal, and the kids loved it! Keenan (7 years old) even ate the plain yogurt with it (win!). I’m really enjoying eating as a family, and love that the kids are eating good food for breakfast. NOTE: So far, kids are eating all breakfasts and dinners with us, but I am making different lunches for them for during school.

I ended up needing to switch my snack and my lunch for each other today, as I just didn’t have time to eat the lunch at that time. Also, the lunch was HUGE, and I could only finish half of it.

Dinner was delicious! However, it was much more than just one taco serving. And I can’t believe it, but Cory (husband) ate avocado! He HATES avocado with a passion, but asked to give it a try with the dinner. He actually didn’t mind it (his report). The kids loved dinner too! Keenan gave it a thumbs-up (see picture above).

The power greens were a little more tolerable todayI totally skipped one of my supplements before dinner. That’s what I get for not looking at the schedule. I totally thought they were for after dinner. That’s okay, though, I’m glad I could wait two hours and just take them later.

Overall, I feel like I am still going strong (heck, it’s only day two, so I better be!). I am not looking forward to food prepping for tomorrow’s meal, but I hope it won’t take long.
