BREAKFAST: Fresh fruit platter and plain yogurt
LUNCH: Lentil-lime salad, and sushi with tempeh, brown rice, cucumber, avocado, carrot
SNACK: Chocolate Shakeology, made with avocado
DINNER: Stir fried veggies on quinoa, with a cucumber-tomato salad
WATER: 81 ounces, flavored with cucumbers today
SUPPLEMENTS: Done! And even did this correctly today!
EXERCISE: 22 pushups, and a 2 mile walk in the morning
This evening was CRAZY. After I picked up Keenan (7 year-old) from school, we came home, ate snack together (he loves his Shakeology!), and I started prepping dinner and lunch for tomorrow. Rhys (9 year-old) gets picked up an hour later (after marimba), so we headed back to school in the middle of prepping. When I got home again, the boys started getting ready for baseball practice, while I continued making dinner. These would typically be the nights that we would eat fast Mexican, throw a frozen pizza in the oven, or piece together a snack dinner. Oh, let’s just be real – I would normally gorge on chips, salsa and cheddar cheese. Instead, I stayed the course and prepared dinner for us to take with us.
After massive chaos hit the kitchen, and 15 minutes after I planned to leave the house, we were out the door – dinner on the counter for when Ellie (17 year-old daughter) got home, and dinner in the fridge for Cory (husband). By miraculous intervention from the traffic gods, we made it to Keenan’s baseball practice on time. While Keenan was practicing, Rhys ate dinner. He loved the veggies and quinoa, but wasn’t a huge fan of the cucumber-tomato salad (I think it was the vinegar). After Keenan’s practiced ended, we walked across the field for Rhys’ practice. At least they were at the same location! I ate my dinner then, and Keenan took his down to the sand pit, and gobbled everything up!
I was SO happy that we had brought dinner, as Rhys’ practice ran 45 minutes over, and we would have been STARVING if I hadn’t been prepared. 2.75 hours later, and something like a 20 degree drop in temperature, we were finally ready to head home. Phew!
I’ve got to say, I am in love with the stir fry veggies! I have never used coconut and sesame oils to stir fry veggies before, and it was delicious! I am excited that they’re on the list for dinner tomorrow, too.
Another day ends successfully, and I even remembered to take all my supplements on time 🙂
