I cannot believe I have reached my final day of the Ultimate Reset! It has been an amazing and educational experience, that is for sure! I will report more on that tomorrow!
Today had a lazy start to the day, which was nice. The first thing we had was to bring Elliott to a friend’s graduation party at 11:30. I loved the fruit for breakfast (as always), but I have to be honest that I cannot wait to have my Shakeology tomorrow. I have really missed it!!!!
After dropping Elliott off at the party (which was a beautiful drive our Lorraine Hwy), I headed in the the college to do a little work. After a few hours of work (while Cory was playing baseball with the boys), I went home to make lunch, and start preparing dinner (which I knew needed to marinate for a while). The jicama-avocado salad was interesting. I enjoyed the taste quite a bit, but it was a little too much jicama after a while. I ended up just eating the rest of the avocado out of it, once I was getting full. The soup for dinner was easy to make, and I left it in the fridge to marinate while I picked up Elliott from her party.
Tonight was our coed softball team night. We were slaughtered! We were missing three of our normal players, and had substitutes, and we just played a little “off” the whole night. At one point I had a close-call at first base, and had to run as fast as I could to get there. I think I used up all the glycogen reserves in that run. Man, I really need to get some grains in me! It was nice that Taylor (21, son), and his girlfriend Gypsy can to watch us, as we haven’t spent a lot of time with him lately.
After the game, we returned home, and I started roasting the veggies. I took my LAST POWER GREENS!!!!! (pictured above) It was a fun moment to realize that we were almost done.
The roasted veggies for dinner were delicious! The soup was very interesting. It tasted much more like cucumber than it did like avocado. The taste was okay, but we could only handle a little bit of it. It seemed like it was missing something, but I don’t know what. Elliott (17) tried it heated up, and the taste changed considerably, as it really brought out the avocado instead of the cucumber flavor. Then Cory (husband) commented that it would be good as a salad dressing, which I agreed completely with. I might have to try that. I only ended up eating half of it, but I was satisfied nonetheless. Although, I was hungry again later in the night (tolerable).
Cory was convinced that since we finished everything by dinner, that it meant we could go eat movie popcorn then. He pushed hard, but told him we had to wait to be “done” until the morning tomorrow (after we weigh in).
I have been putting a lot of thought into what I want my diet to look like starting tomorrow (and into the future). I still have a few decisions to make, and I hope to share that all with you tomorrow and in the next few days. I also can’t wait to start up my fitness again!
But for now…..it’s time to rest! Stay tuned for our results and lessons learned tomorrow!
