Oat Waffles

Mickey-shaped oat waffles, topped with sliced strawberries and whipped cream

Ingredients:

2 cups oat flour

1 tbsp baking powder

1/2 tsp salt (if desired, I often omit)

3/4 – 1 cup unsweetened apple sauce

1/2 – 1 tbsp olive/canola oil (or you can omit, and lightly spray waffle maker with oil before cooking each waffle)

1 cup milk

1 tbsp pure vanilla

Directions:

Combine all ingredients in order, and mix in between each addition. Bake using waffle iron (mine is Mickey Mouse shaped). Follow waffle-maker directions until waffles are done.

Topping Ideas: I enjoy mine with sliced strawberries (or other berries), with whipped cream (I do not add sugar, but just beat heavy whipping cream on high, until desired consistency). Sometimes I have added diced bananas or diced apples with cinnamon, for a more textured waffle. You could also try adding chocolate baking powder for dessert variety (I have never tried this, as I don’t like chocolate, but I’ve seen it as a recommendation in other waffle recipes).
